A Joyous Christmas with Crowne Plaza Singapore

There is no better way to celebrate Christmas than to have your loved ones all gathered under one roof for a decadent feast. Offering traditional selections, unique flavours that will tantalise your taste buds and luxurious choices, the culinary team at Crowne Plaza Changi Airport put together a menu that will give you the best Christmas party like no other.

The salads are so vibrant that I can't wait to savour them. The savoury one would be the Chopped salad with smoked turkey ham and cheddar, super good to start your festive buffet palate, I could not stop eating it. On the other hand, the Festive Apple and Pomegranate Salad with Crushed Pecan Nuts was a little heavy on the dressing, which made the supposed refreshing salad a little pale in comparison to the former. (Both Available on Azur's Festive Buffet)

Also on the Azur's Festive Buffet is the Pan-Seared Scallop with Warm Butternut Squash and Arugula Salad. 4 words - Freshness in my mouth. The Scallops came with their roe and no additional thick sauces were needed for the natural sweetness to spread on our tongue, Yums! I'm sure this item will be a HOT favourite on the buffet line, keep your eyes on them!

Buttered Winter Vegetables
Nope, this is not Halloween's Menu, This Sweet Potato with Marshmallow Gratin will be a hit with those sweet tooth out there and the kids! Natural and Constructed Sweetness comes together in this dish but I recommend to take small bites over time instead of stuffing them in all at once.
Sweet Potato and Marshmallow Gratin

Though Crowne Plaza Changi Airport cordially invites you to a feast of great food and merrymaking with the ones you love, they have a selection of irresistible festive takeaways for you to celebrate a cozy Christmas with your family in the comfort of your own house with their takeaway items.

For an east-meets-west option, the Festive Baked Turkey with Angelica Root ($165+, approx. 5 kg) is marinated with an Angelica Root powder rub and stuffed with Sweet Corn, preserved Mei Cai and Chinese blood sausage. The tender meat from the turkey almost made me took a second look at it. Complemented with a Cranberry & Orange Marmalade, the sweet sauce did not over power the aroma of the stuffings which made this turkey a real special one!

Meat Lovers, cheers to the Provencal Crusted Rib Eye of Beef ($255+, approx. 3 – 4 kg) roasted to a perfect medium doneness, Available on the Azur Festive Buffet and also for takeaways, the Beef is seasoned with Provencal Herbs so well that no other sauce was required. If you would like something different, they also have the Chermoula Spices marinated Boneless Leg of Lamb ($185+, approx. 2 – 3 kg)  OR an elegant Salmon Wellington ($90+, approx. 5kg).

No dinner will be complete without a sweet treat and Azur is happy to welcome Pastry Chef Wong Khek Cheong to the team and his creations are here to WOW. Offering a refreshing twist to the famous French Yule log cake, the Yuzu Infused Log Cake ($62+) is layered with Meringue Sponge, Caramel Crunch and Yuzu infused Valrhona Dulcey Chocolate. The Valrhona Dulcey Chocolate gives a creamy and toasty flavour while the yuzu lingers on the palate. Definitely a unique take on the usual log cakes! The Eggnog Pannacotta hides a deliciously sinful golden brown caramel sauce beneath, giving you the feeling of bliss when paired with the smooth pannacotta. I want More!

This March, Crowne Plaza Changi Airport present The Tremendous Black Angus Buffet at Azur. I was elated to have received this invite for the Beef-ed Up Tasting Session, Lets get started!

Accompanied with lemon wedges, cocktail sauce and hot sauce. This Alaskan Snow Crab legs are sweet but not juicy enough IMO, dip it in the cocktail sauce or the Hot Sauce for a different experience! I would recommend oyster lovers to dive into their unlimited flow of Oysters too!
Alaskan Snow Crab Leg

The sirloin is pan seared to a beautiful Medium-Rare, and to avoid over oiliness, the fats are trimmed off after. The sirloin is then thinly sliced, tossed in sesame sauce with red radish, lotus root and edamame. The Balance of crunchiness and tenderness was delightful with the flavour of the sesame sauce. It's a MUST TRY!
Sesame Black Angus Beef Salad with Red Radish

On the first look, this Sliced Black Angus Short Rib tossed in Azur's homemade black pepper sauce might look like the chinese Zi Char style of Pai Gu Wang(Pork Ribs), But upon the first bite, it's is far from that.
I love how the short ribs are not too thick and they are evenly cooked, and I like how it is chewy but not to the extend of making my jaws ache, you get what I mean?
Wok Fried Black Angus Short Ribs with Black Pepper

Potato pasta tossed in black truffle paste sauce and topped with shaved parmesan cheese, I'm not a fan of Gnocchi, therefore this dish did not stand out to me.
Truffle Gnocchi with Parmesan Cheese

This Beef Cheek dish was a Crowd Favourite! The Root vegetables consist of baby carrot, turnip, parsnip and celeriac but the star of the dish, the beef cheeks, were melt in the mouth goodness. Nothing else to say, Just enjoy it!
Braised Beef Cheek with Root Vegetables

Resting on a bed of forest mushroom consisting of portobello, champignon and trumpet mushrooms and Potato slices, The Beef Steak with the sauce, Mmmm. I predict there to be a queue for it at the chaffers.
Grilled Black Angus Beef Steak with Forest Mushroom Ragout

The Bahia rice soaked up the flavours of the Mussels, prawns and Squid, Delightful Carbs.

With the Chinese New Year Song Ringing in your ear when you step in to any shopping mall or shops in Singapore, Are you already feeling the CNY mood like I do? :) And with CNY comes reunion dinners and friends gathering for steamboat and lou hei, but do you want to make some special changes this year? Why not have your reunion/gathering dinner a buffet style? :)

Azur Restaurant aims to bring a taste of spring home with sumptuous Prosperity Yusheng options created by Executive Chef, Andrew Tharm, and his skilled team of culinary professionals available from 20 January – 14 February 2014.

Crowne Plaza's Prosperity Yusheng - Contemporary Version $48++
Alternatives are available: Wolf Herring ($48++), Sliced Abalone ($88++) and Mock Abalone ($42++)(Vegetarian Option) Each Set of Yusheng can serve up to 8 people and is also available for takeaway!

I love Lou Hei (Prosperity Toss) because of the salmon or the fishes that goes along with the shredded vegetables and the process of tossing where everyone will say good wishes for the New Year like "Best of luck for Work!", "Hope to strike 4D ah!" , "Good Health the whole year!" etc. I love the joyous vibes that radiates off everyone.

The following dishes that you are about to see are all available on the buffet line, eat to your heart's Content!

Smoked Duck with Citrus Fruit & Lychee
This refreshing cold dish will be served at the appertizer station (remember that Azur has a Buffet Line). Welcome Spring with this pair, Succulent Smoked Duck paired with citrus fruit to give a sweet start to spring!

Fortune Pig Trotter with Dried Oyster and Black Moss
Traditional CNY Hot Dish served Piping hot in chaffers. This Pig Trotters has Melt in your mouth Fats and Tender Meat. I think this is enough reasons for you to go try it! I personally loved it!

Double Boiled Dried Scallop and Golden Enoki Soup with Shredded Meat
Served as Asian Option at the Crown Soup Kettle (Next to seafood on ice)

Fried Rice with Eight Treasures
Executive Chef Andrew Tharm's rendition of ĺ…«ĺ®ťç‚’饭. The 8 Treasures are: Gingko Nuts, Lotus, Prawns, Ham, Edamame, Waxed Pork Belly, Carrots and Eggs. This is one fried rice I would not miss out on the buffet spread. Normally I would skip the Carbs when I'm having a buffet but for this, I'll definitely make an exception. Fresh Prawns and crunchy nuts and the flavour of  the Waxed Pork Belly & Ham makes it unstoppable!

Steamed Seabass with Snow Fungus and Lilt Flower
The Most Important point for all seafood dishes is Freshness. If it's Fresh, It's good enough for me. The Vibrant Colours of the wolfberries and Lilt Flowers made this simple Steamed Seabass dish a more appetizing (and photo worthy) one!

Sea Cucumber with Chinese Mushroom Casserole
I'm no Veggie person but the cut of the Sea Cucumber in this dish is definitely eye opening. And Mushroom Lovers, Please just go dive into the huge Chinese Mushroom goodness. The other diners at the table were praising the mushrooms for being huge and not tough.

Eefu Noodles with Shimeji and Yellow Chives
I'll Love My Ee Fu Noodles Anywhere Possible. It's almost hard to find a good Eefu noodle out there now in Singapore that I treasure every single time I have it, and Azur's Version did not disappoint!

Osmanthus Creme Brulee with Seasonal Berries
A Play on the western style dessert with a touch of oriental goodness - the Fragrant Osmanthus Flower infused into the creme brulee is definitely a first for me and it was delighfully pleasant.

Cherry Clafoutis with Vanilla Sauce
The Cherry Clafoutis is a light pudding filled with juicy cherries. Vanilla sauce is served seperately to be drizzled as per customer's desire at the Dessert Bar

[F.T] Christmas with the Intercontinental Hotel Group

Christmas is just round the corner! Have you decided on where to head to for christmas night for a lovely night with your loved ones? :) I was invited to attend A Sparkling Christmas with the Intercontinental Hotels Group namely Crowne Plaza Changi Airport, Holiday Inn Atrium, Holiday Inn Orchard City Centre amd Intercontinental Singapore to have a first taste on what they have to offer this festive season! And I must say I'm quite surprised by the menu!

Tandoor from Holiday Inn Singapore Orchard City Centre served up an Indian X Christmas menu that was interestingly attractive. This Christmas Mince Pie a la Indiana is a crusty tart filled with dried fruit pudding and topped with a huge star is available on their Festive Gourmet Menu ($58) from 28 November to 1 January!

Tandoori Turkey & Roast Turkey($88++ Each) were baked with aromatic Indian spices for the wonderful flavour, definitely a different take on turkey this year!

Man Fu Yuan from Intercontinental Singapore has chose to Embrace the chinese in us (if you are a chinese) this festive season by serving up their Winter Solstice Festive Menu. Heartwarming dishes like the Claypot Rice ($12++ per pax) which allows diners to customize their own claypot rice with the many toppings available, for example: salted fish, Chicken, preserved duck etc.

If your elders do not like turkey, have a switch and try this Stew Duck with Yam! Tender pieces of duck meat and the melt in your mouth Yam pieces are sure to please them!

The Nonya Assam Chilli Turkey by Chef Eric Neo of Intercontinental Singapore was my favourite that night! Surprisingly tender and flavourful turkey which taste a little like our Curry chicken. Yums!

For a Seafood Lover, I could not resist having seconds at the Holiday Inn Atrium The Melting Pot Cafe's Booth that night. Their Pan-seared Scallop on Fennel with a hint of Pernod Cream was refreshing and Huge! Yes, the plus sized scallops was topped with crispy rice krispies which added an additional punch to it!

And Of course, Which Christmas Party could do without a Log Cake? Festive Sweets are available as well, do check out what the Intercontinental Hotels Group have to offer!

Crowne Plaza Changi Airport's White Forest Log Cake ($62) is as good as it sounds! Velvety Smooth White Chocolate Mousse, filled with dark Cherries and Vanilla Beans, mmmm.. Sounds good enough for me to dive in!

Are things sweetening up this christmas for you? Personally I can't wait for christmas to come!
Merry Christmas Everyone! :)

[F.T] Azur - A Taste of the Seven seas

The only place I wouldn't mind visiting everyday would be our Singapore's Changi Airport. I love to dine in the Airport with the Wide Range of Choices but little has been heard about the Hotel's Dining Options. Even I myself have not stepped into the Hotel for any dining options. So the question come, does Crowne Plaza's Dining Option not meet the expectations of the crowd?

I was invited by Karen(@Superfinefeline) for a tasting at Azur for their Premium Buffet Dinner Spread. The Restaurant will be launching its first edition of the Seven series, Feast of the Seven Seas, over a limited period of two weekends from 19 - 21 July as well as 26 - 28 July.

As it was my first visit to Azur, I took on a tour around the place and I am impressed with the live cooking Demo stations where the chefs do their thing right infront of your eyes. Talk about a feast for the eyes.

And with a Wide Selection, I was so tempted to try everything on the spread that day, but I had to control myself as I had to taste the special series later on!

Did I mention they have a cheese Section? ^^

AND A WHOLE LOT OF SEAFOOD FOR YOU TO GRAB!

Unlimited amount of Lobsters, Scallops, Muscles & Oysters will be available for the normal buffet times BUT! Fines de Claires Oysters, instead of Australian Oysters, will be available during the promotion period!

And also, I don't go home from a dessert without attacking the Dessert Table, :P Azur's Dessert Table Setting does impress me with the range of selection available.

The Gourmand Experience First Edition
Feast of the Seven Seas

Complimentary Mocktail: Which has Orange Juice and Honeydew. Refreshing.

Selection of Premium Chilled Seafood

Diners get to enjoy a wide range of seafood selection from freshly poached prawns to Premium Oysters and Boston Lobsters to Fresh Muscles and Scallops.

Lobster Bisque with Tarragon Chantilly Cream with Herb Gougères
Packed with Flavour, I could ask for another serving. Smooth enough for me.

Black Pepper Slipper Lobster

The Lobster was well coated with the black pepper sauce and the sauce was not too spicy for a lousy spicy eater like me. Fragrant and it made me crave for more!

Hawker Style Bamboo Clams
I felt that this dish lacks the freshness I desire, the meat was a little tough for me, Overall just an average to me.

Baked Whole Salmon with Seafood and Aromatic Spices served with
 Coconut & Lemongrass Espuma.
Highlight of the night. Baked Whole Salmon with loads of Big Fat Scallops and Prawns Stuffed on it to ensure Diners a Wonderful Mouthfeel.

Every Bite in to the Salmon brings me up to heaven (well, sorta). Soft and Juicy at the same time, paired with the Coconut & Lemongrass Espuma, it's a totally different taste. with the Fresh Scallops and Prawns, this was the Winner of the night, In my case for that matter. :)

Baked Conchigliette Pasta with Shrimp & Mozzarella Cheese
Disappointing Dish I would say, Lacking of sauce for this seafood focused Baked Pasta Dish. I love my pastas, But It did not win me over. Talk to the chef and Im sure he has taken our feedback in.

Parisian Mussel with Fresh Herb Crumbles
Not a Fan of Muscles but this was good! Simply presented but full of flavour!

I told you I could not resist the Desserts!

1st plate of dessert selection

2nd Plate, FULLER! MEGA LOVE ALL OF THEIR DESSERT!

Please do not miss this offer of such wonderful selection of Seafood and Desserts!
